Chicken Fried Cauli Rice

Simple ingredients:

Cauli rice

Frozen mixed veggies

Cooked or frozen chicken

Egg

Soy sauce or coconut aminos

Prepare:

Scramble the egg (I use a cup of egg whites) in a large skillet over medium high heat and set aside.  Put a little oil in the pan (I use about a tablespoon of coconut oil) and dump in cauli rice, let saute for a minute or two.  Then dump in chicken, saute for a minute or two. Veggies (as much or as little as you like) dump them in, saute until most of the moisture evaporates.  Add the egg back in to warm up and put in some soy sauce or aminos, I usually start with a tablespoon and taste it.  Add more if needed.  Turn off heat, drizzle just a little sesame oil over the top and toss together.  All told, this is about 15 minutes from start to finish.

BOOM!

    I made something very similar to this but I grated my own cauliflower…it was a mess. I’m wondering where you got your frozen cauli from? I need something better than using a cheese grater to make my rice!!

      Hey there! I got the frozen stuff at Earthfare! But I’ve seen it at other grocery stores. If you do it yourself, use a food processor and just pulse it a few times until it’s rice sized! Let me know what you think next time you try it!
