I love simple recipes with big flavor… I put this one together because I love Zoe’s Kitchen’s coleslaw and this if very similar!! Pop ingredients together in a large plastic container with a lid and let sit in the fridge for a couple hours if possible. If you can’t let it marinate, that’s okay it’s still good! Leftovers should be eaten the next day as it gets really mushy if it sits too long.
Bag of coleslaw
Container of feta (maybe 1/2 to 3/4 a cup)
Bunch Green Onion chopped
1/2 cup oil (I used Olive Oil)
1/3 cup vinegar (I have used White, Red Wine or Rice Vinegar. I prefer Red Wine)
Salt and Pepper to taste
Pop it all in the container and mix well. Let sit for as long as you can resist, then devour! I like to blacken some fish in the pan with some coconut oil and blackening seasonings to put over this. I buy the frozen fish at Harris Teeter to have on hand, but if you are making this on a Monday, you could buy fresh fish on a Sunday. I hate going to the grocery store every day (although it seems I find myself there many days!)
